Active quests for Legion Crafted Legendaries remain active, even if you change one or both of your professions. While it's active, you cannot start the quest line for another crafted Legion Legendary.
After you complete the active quest, you can start the quest line for another active-profession's legendary.
Note: You can still complete the quest if you don't have access to that profession.
